But Do I Want to Garden in a Puffer Coat?

The idea of growing vegetables in winter sounds far-fetched. Do I want to build a cold frame just for kale? (Which is all I thought a winter garden was.) 

Farm manager Michelle just laughed. “There's so much more to grow than kale!” she said.

In an urban setting (warmer and and more sheltered than a field) it turns out with just a layer of crop cover cloth outside, I can grow:

carrots; leeks; kale; collards; lettuce; 

turnips; bok choy; tatsoi; mustard greens; parsley & cilantro

—as well as— 

crunchy microgreens indoors.

In worm bin compost, 

obviously.

But do I want to garden in a puffer coat?

“YES” says Michelle. “cold-grown veg is extra delicious!”

Cold turns the starch in plants to sugar as an antifreeze. Who knew?
